The Dievole Wine Resort can be reached along a winding dirt road, rhythmically marked by tall cypresses that for decades have enjoyed in silence an unparalleled panorama, the same that infallibly enchants all the guests of our structure.
Dievole, just 12 km from Siena, dominates this enchanting area from a privileged position, overlooking a large portion of the Chianti Classico hills and the Chianti Mountains, offering a breathtaking view.
But the guests of the Wine Resort are also struck by the charm of its gardens, dotted with centuries-old trees, fragrant plants and flowers, by the elegant architecture of the manor house, built in the 18th century by the noble Malavolti family of Siena and by the other buildings of the small village, among which the stone and brick church dedicated to San Giovanni Battista stands out.

THE HISTORY
Dievole is set in tranquil surroundings, nestled in the beautiful Tuscan hills, long known as a little piece of heaven on Earth. Here the dialogue between Mankind and Nature has never been interrupted, and its very name explains why: In fact, the root of the word Dievole comes from “Dio vuole” or “God willing”.
The name Dievole officially appeared for the first time in a contract in which Rodolfino and Vinizio paid two capons, three loaves of bread, and 6 silver Lucca denari for a promise of the divine vineyard. It was on the 10th of May 1090. Eight centuries and countless generations later, another contract mentions Dievole.
This time it was a wedding gift. Count Giulio Terrosi-Vagnoli gave the Estate, costing 361,632 lira, to his future wife Ildegonda Camaiori, who was to be the last noblewoman of Dievole.
She is responsible for an invaluable document that has survived to this day: Dievole’s Ledger of Balances containing all the names of the peasant families at the time, and the name of the holding entrusted to them.
These are names that hint at the passion of Chianti’s people for their own land. Many descendants of those families are still here. Since the 1980’s, their age-old wisdom has returned to care for Dievole’s vineyards: 16 vineyards, just like the 16 holdings into which the property was divided.

In 2012 Dievole began a smooth, gradual renewal, aimed at enhancing the deepest identity of this territory. Yesterday’s dreams become tomorrow’s goals; old certainties blend with new ideas. The respectful evolution began with listening to the earth and has a common thread running through it: quality.

DIEVOLE BETWEEN PAST & FUTURE
Whether tasting our Chianti Classico 2013 is your first experience with Dievole or you are a long-term lover of the brand, one thing is certain: Dievole has been producing wine since 1090 and the company has been continuously evolving in the past few years. A look at past labels tells a story of change, but also consistency.
In 1985, an ornate, heraldic label in black and white graced our Chianti Classico. The name refers to the closest vineyard to the hamlet “Colombaio”, a heritage from the noble Family of Malavolti from Siena, former owners of Dievole property for several centuries.
The later 80s and 90s brought in a new era – the Dievole logo and a graphic label that put emphasis on the wine itself. The gold background – which, over the years has been solid, striped or mottled – represents the land itself, the terroir of this special Chianti Classico wine.
2013 marks a new era for Dievole, a Renaissance of the winery in which these themes all come together: heritage and land, hospitality and people. The Chianti Classico 2013 is the first Dievole wine to fully communicate the uniqueness of this terroir and Dievole’s respect for it.
The label reflects the wine within, and the new production philosophy: elegant, fresh and complex with beautiful aromas that reflect our ancient territory.
SUITE
Prestigious and perfect for pampering, the three Suites at our hotel in Tuscany reflect the harmony of the Tuscan countryside. Two of these spacious rooms have been created in the Limonaia of the main building, known as the “Villa”.
One of these beautiful Suites is situated on the ground floor, with direct access to the garden; the other is located on the first floor. Both vaunt mesmerizing views over the picturesque valley. From the all-round windows, verdant woodland, rolling hills and tranquil vineyards set the scene from this idyllic high-end accommodation.
The gate leading to the panoramic pool and manicured green lawn is found in front of the main entrance into the Limonaia. The first-floor Suite boasts a private terrace that looks out over the spacious garden in the shade of the regal oak tree.
The furnishings in both Suites were inspired by the lemon tree, from the memorable paintings to the singular ornaments. The shades of the fabrics and the blending of details make these Suites unique.
The elegant yet understated furnishings in natural hues are accentuated with polished brass touches and extraordinarily matched antiques. Two additional beds can be added to one of these rooms, on request.
One of the three Suites at our rooms near Siena is located in the smaller three-roomed “Dievolino” complex (a Classic, a Deluxe and a Suite), adjacent to the panoramic Giardino del Tasso garden, with wide-ranging views over the greenery of centuries-old olive trees.
Here the art changes topic. The paintings depict birds with pastel blue plumage. The attention to detail and careful blending of decor make every suite unique. Single and double beds are available, topped with the softest goose feather comforters and pure percale cotton sheets.

The Prestige Suite has been renovated according to traditional tenets, with the intention of allowing the nature of Chianti Classico to echo throughout the ambience. You will be greeted by an open-space living area, an elegant bedroom with a double bed and a private bathroom.
White and ecru are the dominant shades in this refined and refreshing suite. The Prestige Suite is a superb example of integration between architecture and nature.

The refined suite in this Tuscany vineyard hotel extends across 90 square meters between a spacious lounge and a night area with the master bedroom. It is situated on the first floor of the “Villa” via a conveniently placed elevator on the ground floor, where our “Novecento Restaurant” is also located.

FAMILY APARTMENTS
Our luxurious suites near Siena welcomes families with apartments set in the “Colombaio”, which can accommodate up to 4 adults, with all the comforts and freedom of two separate spaces. The apartments are situated at the highest and most scenic setting of Dievole, known as the “Colombaio”.
The views range over the verdant hills caressed by rows of vineyards and the natural Chianti Classico valley. To the north, guests can explore our circular vineyard, a large wheel whose spokes stand guard over Dievole’s rootstocks: all of the winery’s grape varieties and clones.
From the top of the hill, standing at 450 meters above sea level, the highest point on the estate, enjoy the green cascade of vineyards, woodland and olive groves, as well as breathtaking views over the rolling Chianti Classico hills.
Every apartment at our elegant Tuscany vineyard hotel can accommodate up to four guests, with a double bed and a sofa bed sleeping two people, or a bedroom with a double bed measuring 140cm in width. All apartments have a kitchenette.
Comfort and practicality are the hallmarks of the Family Apartment at our hotel in Tuscany. The perfect solution for families, the layout and position of the apartment vary across the Resort. The Deluxe rooms at our hotel in Tuscany, spacious, stylish and recently restored, blend traditional and modern design, a cross between heritage and the highest hospitality. The artisanal furnishings and matching fabrics feature decorations and motifs purpose-designed for the hotel.

THE RESTAURANT NOVECENTO
The restaurant at Dievole, known as “Ristorante Novecento,” owes its name to our Chianti Classico Riserva, founded in 1990 to celebrate the Estate’s 900th anniversary. It is located on the ground floor of the villa.
Open Monday to Sunday at both lunch and dinner, this restaurant near Siena offers a cuisine based on seasonal ingredients, and select delicacies from local producers with whom we interact directly whenever possible.
During the summer period, from June to September, guests can enjoy lunch and dinner outside in the beautiful “Aione,” the historic, tiled courtyard bordered by the fragrant rose garden.
In the winter, dining service moves indoors to the warm and inviting rooms of the restaurant inside the late 18th-century villa, where guests can experience the flavours and fragrances of traditional Tuscan cuisine, reinterpreted with a contemporary flair.
THE MENÙ
Wild edible greens, hand-picked in the nearby fields by chef Monika Filipinska, ancient grains and stone-ground flours, vegetables, fresh seasonal fruit, honey and local cheese, as well as extra-virgin olive oil and wine produced at Dievole: these are the ingredients that make our dishes delicious, healthy and well-balanced, that celebrate and exalt the culinary tradition of our territory.
In our Tuscan restaurant you will find traditional local cuisine but lightened with a modern touch and plated with precision. The menu, which changes monthly, always offers a range of antipasti, primi and secondi to satisfy different diets and tastes.
Filled pasta and creamy risotto, meat cooked to perfection and the freshest fish can always be found on the menu, as well as exciting and flavourful vegetarian options. The kitchen is, of course, particularly attentive to special diets and allergies and is able to accomodate them upon notice.
LOUNGE BAR
On the ground floor of the main villa is the Lounge Bar at Dievole. Particularly in autumn, it has maintained its original purpose as a gathering space on the estate. Today, our guests come here before dinner to enjoy a glass of wine comfortably seated on the lounge’s many couches and armchairs.
Over the centuries, this is where employees coming back from the countryside would gather after a day of work, keeping the best of the season in the wonderful terracotta silos. For the farmers, it was a place to come together like a large family and listen to tales of the goings-on that day.
Next to the restaurant is the Giardino del Tasso, a pleasant green space with a view on the properties vines, olive trees and wooded areas. This garden is named for a centuries-old “tasso” tree – European Yew – that offers shade to those who wish to enjoy an aperitivo or light snack here, overlooking the typical landscape of Chianti Classico.

DIEVOLE
Dievole covers an area of 600 hectares within the Chianti Classico territory in Vagliagli, about 12 km north of Siena. Beginning from 450 meters above sea level, the medieval hamlet where Villa Dievole is perched, overlooks the valley in which the estate slopes down to the southeast in gentle rolling hills ending at an altitude of around 300 meters.
A long cypress-lined avenue leads to the heart of the estate; a stunning Tuscan panorama opens, and from there a dense network of white roads alternates with olive trees, vineyards and farmhouses. It is an unforgettable landscape in which Nature, History and Culture, together with centuries of man’s work, create a beautiful land that enchants the world.
Here wine and extra virgin olive oil have been produced for nearly a thousand years, often struggling with a difficult climate. The “Chiantigiano” microclimate makes no exceptions for Dievole, where the winters are harsh and often snowy, and, after a few months of spring tranquility, are followed by hot and sunny summers.
Only at the end of September does the sun turn mild and the temperatures go down; slowly the landscape turns ablaze with autumn colors. But, long ago, at Dievole the seasons and human activity achieved balance, and today the estate is a harmonious environment in which quality is found in every gesture.
CHIANTI CLASSICO TERROIR
At Dievole, the combination of land, climate and human experience makes the Chianti Classico unique: a patrimony with a long history that the company feels the responsibility and the duty of passing down to future generations.
Situated between 270 and 420 metres a.s.l. the 158 hectares of vineyards vaunt a partly sandy, partly silty clayey terrain, with a dense presence of fossils and marl. Given the vastness of the vinery, the soils differ considerably from one side to the other, bestowing the wines with a precious mosaic of hues.
Much of the planted terrain is dedicated to the Sangiovese but there are also other Italian vine varieties typical of Tuscany and the Chianti Classico wine region, like Canaiolo, Ciliegiolo, Colorino and white grapes, including Trebbiano and Malvasia.
Dievole’s goal, starting with its own vineyard, is to recover the character of the historic native Tuscan varieties and to shift them to the glass with the utmost respect for the authenticity of the terroir and the identity of the variety.
THE WINE CELLAR
In the style of a typical Italian cellar, where the value of tradition blends with the guaranteed quality of contemporaneity, every step in the production phase is essential and worthy of careful attention, from the vineyard to the bottle.
The bunches of grapes are moved into a cellar equipped for a production of the highest calibre, and they follow a vinification process in unrefined cement Tulipe vats neatly arranged under a long series of splendid arches.
Thanks to its porosity, the use of cement allows the wine to evolve naturally, maintaining all its freshness, harmony and equilibrium intact. Next, the wine matures in untoasted Allier French oak barrels to preserve the typical characteristics of the Sangiovese.
THE OLIVE GROVE
Dievole has olive trees in Tuscany and throughout Italy. This priceless heritage of genetically unique plants, often handed down throughout the centuries, is the starting point for developing a product line of high-quality extra virgin olive oil with a strong identity.
Everything comes from the raw material: without quality olives, an excellent extra virgin oil cannot be produced. For this reason, at Dievole, each olive grove follows precise processing schedules. The goal is to bring to light oils that would otherwise be lost, and to enhance the aromas and flavors of unique oils of extraordinary sensory worth.
At harvest time, each production batch has its own ID card, guaranteeing absolute traceability to ensure the full expression of a given territory, whether related to DOP Chianti Classico, the Tuscan IGP or a 100% Italian oil.
THE OLIVE MILL
Pianella, where the Arbia River marks the boundary between Gaiole in Chianti, Castelnuovo Berardenga and Siena, along the famous “Chianti 408” road, is home to our olive mill, a state-of-the art technological plant with a low-oxidizing impact that preserves the quality of extra-virgin olive oil.
Here all the selected olives are pressed within a few hours of harvest, with absolute traceability and no added water, and low dispersal of vitamins and antioxidants. It is filtered immediately after extraction.
Every step is meticulous: the pressing speed and technology are adjusted for each cultivar and each batch, the crushing and exposure times of the pastes during the oxidation processes are calibrated, and the extraction temperatures are constant and controlled.
This combination of technologies – both extraction and filtration – is intended to keep Dievole’s extra virgin olive oils as fragrant, fresh and exciting for as long as possible. At the end of the process, the extra virgin olive oil is stored in stainless steel vats, sheltered from light at temperatures below 22°C. Afterwards, it is vacuum-bottled.
The bottle used reduces the impact of UV-ray penetration by 97%. Year after year Dievole remains faithful to its philosophy based on constant innovation by investing in research and development with institutional partners such as research institutions, universities, public and private organizations, chambers of commerce, consortiums, educators and specialized consultants.
EXTRA OLIVE OIL TASTING
This tasting is a complete immersion in the world of Extra Virgin Olive Oil, discovering Dievole’s production philosophy and the peculiarities of each typology.
The Wine Shop is the perfect setting to appreciate the visual, olfactory and gustatory differences between four olive oils: Chianti Classico DOP, Toscana IGP, 100% Italian Blend and 100% Italian Monocultivar Coratina through a technical tasting (the products may vary based on availability).
This experience takes place by reservation only every day at 3pm. For any requests at different times, you can contact us by email or by phone. For those wishing to deepen this journey of the senses, this tasting tour can be accompanied by an olive oil-themed lunch at the Novecento restaurant.
DIEVOLE GRAND TOUR
The Dievole Grand Tour allows you to live a unique experience by discovering the most evocative views of the property.
After a welcome in the Wine Shop, the story of Dievole’s history and philosophy continues through the vineyards and the small village until you reach Fidelio, the circular vineyard from which it is possible to admire all the native Tuscan grapes. The experience will then continue in the production and aging cellar until it reaches the exclusive D’Wine Club room.
Here the tasting of the wines produced in the exclusive Chianti Classico area will take place, paired with a platter of local delicacies. For those wishing to deepen this journey of the senses, by reservation this tour can be followed by a lunch at the Novecento restaurant or a picnic.

PICNIC IN CHIANTI CLASSICO
A picnic is the perfect opportunity to enjoy a memorable experience and discover the unique territory of the Chianti Classico. The experience begins in the Wine Shop with a tasting of three wines and an introduction to the world of Dievole through the explanation of a sommelier.
After the tasting, you can collect your basket and set out for a pleasant walk through the vineyards and olive groves until you reach the picnic areas to enjoy a pleasant experience admiring the landscape.
Inside the basket you will find a bottle of our Chianti Classico and our olive oil, some delicious specialties prepared by Chef Monika Filipinska including focaccia stuffed with local cold cuts and cheeses, a fresh farro or rice salad, seasonal vegetables, a portion of homemade cake and fresh seasonal fruit.
THE NATURAL PATH IN THE LANDS OF CHIANTI CLASSICO
In the Chianti region, among the vineyards and olive trees, you will find the Natural Path of Dievole. A natural path that crosses the most uncontaminated areas of our land. The path is perfect for nature lovers, for the most tenacious sportsmen and for anyone who wants to enjoy the serenity of the Tuscan hinterland.
The path has been recovered by restoring the ancient roads that sharecroppers used to use to reach their farms. The natural path represents a very important gift for the whole local community that today can freely access and discover this precious natural area, given back to its territory.
The Natural Path is 27.6 kilometers long and develops in different variants: The shortest section surrounds the village of Dievole for 3 km and can also be covered on foot. The other paths are more suitable for mountain biking, trekking and horseback riding.
In particular, the Natural Path is an optimal path for mountain bike professionals, who can face slopes with breathtaking views and cross fords, such as the Arbiola torrent. In the Natural Path it is also possible to make excursions on horseback: horse-riding enthusiasts can in fact, on request, ride the path with a guide for a pleasant excursion in the woods.
Finally, lovers of trekking and cross-country running can choose the Natural Path for a special itinerary, with challenging climbs and descents, but pleasantly immersed in the scenery of the Tuscan countryside.
Along the Natural Path there are several rest points such as the “Campo Bocce”, and the “pietra serena quarry” dating back to the 15th century AD. Dievole has provided a refreshment point equipped with tables, where you can stop and enjoy a pleasant picnic.
DIEVOLE’S ACTIVITY NATURE TRAINING SENSE
ANTS stands for Activity Nature Training Sense. It is a fun and healthy way to train the body and mind. This personal training activity sees in the contact with nature its maximum expression, so what better place than the lands of Dievole? Train your senses and body in a half day alongside ANTS personnel. And afterwards, perhaps stop by our wine cellar for a glass of wine.
The activity is structured as a series of simple exercises such as barefoot walking, allowing our feet to adapt to all the surfaces we tread, eating by paying attention to the flavours of food and participating in outdoor sports. All the activities in close contact with nature lead to total wellbeing.
ANTS is a method studied by Human Company, an Italian market leader in outdoor tourism, in partnership with Daniele Tognaccini, the creator of Milan Lab, A.C. Milan’s high-tech interdisciplinary research centre.
The method debuted this year at Norcenni Girasole Village, near Figline Valdarno in Tuscany, before gradually reaching other natural resorts throughout the region.
ANTS will be added to a range of tours at Dievole, available in the Gold version, exclusively for Resort guests, by reservation only, for 2 people maximum. ANTS is a fun way to train mind and body outdoors, leaving behind your usual routine and daily mechanism, and reawakening all the senses.
The goal is to harness nature to improve your quality of life as well as unblocking your metabolism and learning how to eat healthily, comprehensively and in a flavourful way.
