Our chef and Mum Silvana, a Doctor by profession also holds an international masters in nutrition, creates the ideal match between healthy foods and delicious southern flavours – in collaboration with her beloved staff. Embark with us on an Italian food adventure: home-made is our way to go.

BREAKFAST
Kick-off the day is with an Italian cappuccino in the hand and a Sicilian brioche on the side. Or some freshly made omelet with Sicilian cherry tomato salad?
All with sea view in our terrace.

POOL BAR
Relax on the pool bed, grab a fresh-squeezed juice. Our pool bar provides the perfect space to enjoy the water, the sun, and stay close enough to refill your Aperol spritz while ordering a lunch bowl!

ITALIAN STYLE DINNER
Feast on fresh, local island ingredients turned into sumptuous Sicilian dishes created by our wonderful chef. We believe there’s nothing quite like family-style dinners filled with good wine and conversation.

SILVANA
Silvana is a surgeon by profession, also holds an international master in nutrition. Cooking has always been her passion project and that’s why everything she makes has plenty of love. She can create an ideal match between healthy foods and delicious southern flavours.

You can often find her creating something new with herbs from the garden, or spoiling all the staff with her magic desserts. When she is not in the kitchen you can find her by the water in Santa Marina- a good dose of sun and a few hours in the sea, recharge her 100%.

THE POOL & THERMAL BATH
Relax and take in exquisite sea views from the infinity pool and geothermal spa tub nestled in the lush vegetation.

Towels are at the ready at the pool and solarium, so you don’t have to worry about a thing. The spa tub is fed by a sulfuric geothermal aquifer 80 mt deep. The temperature reaches a soothing of 40° C, able to melt the cares of the world away.

CONVIVIAL TABLE
At Principe, we believe the best memories are made around the table. We serve our food family-style to the centre, and if we have more Silvana will pass along to serve you an extra plate.

We love to change the menu daily to focus on fresh seasonal ingredients, local fish and we make no compromise on quality. Same goes for the wines, we have selected Sicilian and Salina’s wine to support our local community and island.

You can review the menu in the morning and sign up directly the same day. You can have all the courses or less, or also ask half portions if your curiosity gets the better of you.

SALINA
One of the seven pearls of the Eolie Islands, Salina is situated in the middle of the archipelago and is an ideal starting point for anyone wanting to explore the islands.

The island of Salina derives its name from an old lake once used to produce salt. It is characterized by two volcanoes and in ancient times its name was Dydime (The Double), due to the similar shape of the two mountains forming the island: Monte Fossa delle Felci and Monte dei Porri.

DIVE INTO CLEAR SEA
The sea is so clean it’s practically crystal clear — a paradise for scuba divers. Secca del Capo is situated a bit further than three miles from Capo Faro and, though the peak of this rock shift is at a depth of 8 meters, most of the dive takes place at a depth of 35 to 40 meters.

ADVENTURE AROUND THE AEOLIAN ISLANDS
Visiting the islands by sea is definitely the best experience if you love water. There are many different options depending on how much time you want to spend and your budget: a private boat with skipper shared group boats, rent your own private boat for the day/half day. The hydrofoil also regularly connects Salina to all the other islands.

VOLCANIC BEACH
The volcanic island hosts stunning beaches:Punta Scario beach in Malfa is a 15min walk from the hotel. Black volcanic rocks and clear waters, create pure magic. The small fisherman village of Pollara was the set of the famous movie “Il Postino”, dominated by a white vertical cliff, part of an ancient crater.

The only dark sand beach of Rinella characterises the colorful village and sunbath amongst the fishing boats. Lingua offers a promenade by the sea with numerous access points to the water.

HIKE THE VOLCANO
Salina is also called “Green Island” because of its forest and Malvasia grape vineyards. Many tracks and hikes possible in Salina.

The most famous one is in the volcanic cone of the highest mountain “Monte Fossa delle Felci” – a wonderful tree fern forest, which is today a protected natural reserve reachable through a track.

It takes around 2 hours to get there on foot and the starting point is the Sanctuary of the Madonna del Terzito in Valdichiesa, reachable also by public bus.

FOOD & WINE
Salina is renowned for the production of “capers” and “Malvasia”, distinctive wine with a very sweet flavor and aroma derived from raisins. Local wine tastings and products are possible to be booked in many of the canteens on the island.
