THE HISTORY
The residence was commissioned by Antonio Sortino Trono in 1778 and was built by the same skilled workers who had constructed the Sortino Trono Palace in Ragusa Ibla, today a Unesco World Heritage site. The neo-baroque style, typical of the palaces of the southeastern part of Sicily that were rebuilt after the 1693 earthquake, is one of the characteristic architectural elements of the Cammarana Estate.

The dominant position of the surrounding countryside with its ancient prickly pear bushes and gardens of jasmine, old roses, bearded iris and hollyhocks, renders this residential estate unique. Tenuta Cammarana has been preserved and cared for, by generations who have cherished it as if it were a precious jewel of the family, that is still today the soul of this enchanted site.

ARAB ROOM
These rooms are large and comfortable rooms and look at the bright Corte degli Aranci. Large Queen bed or two Single beds. Extra bed available on request at the moment of reservation, not all rooms in this category can be triple. Air conditioning controlled from the room, lights are adjustable in all the room, Tea/Coffee maker. BREAKFAST
On the rich buffet there is a choice of hot brioche or home baked bread and cakes, home made marmalade or jam and of course cappuccino or coffe Nespresso!

If sweet delights are not your thing early morning do not worry for we begin with omelettes preparated and served directly from the kitchen, we have a selection of wonderful slice cuts from Nebrodi and Iblean Plateau, or salmon and even a sparkling white wine also. Butter, Ricotta cheese, and Ragusano D.O.P. cheese are from our farm.

Do you prefer a healthy breakfast? We make cold pressed juice of fruits and vegetables from our garden, herbal teas with ginger and lemon, yoghurt and honey from our bees ……. a new day begins at Tenuta Cammarana.

LIBRARY
Our library invite you for a good moment to relax with newspapers and magazines. And if you wish to stay a little longer there are books and boardgames too. We are always pleased to know that our guests are happy to spend their time in our library and even be tempted by a coffe or a sicilian wine….In our library you can find volumes in English, German and French, of natural and botanical interest, history and literature of Sicily and Sicilian cooking.

GARDEN
The surrounding wall conceals a fragrant garden containing many varieties of jasmine, bearded iris and peonies bloom in April, antique roses in May and Pelargonium, lotus flower and bougainvillea during the summer. Indian barrels brighten the evenings at the end of summer with their bows, while the scent of Cistus leaves inebriates the air.

In our Hortus Conclusus we planted our favourite aromatic and fragrant herbs, the enclosed kitchen garden supplies our house with fruit, vegetables and salad. Goldfinches, robins, butterflies, hedgehogs and many other animals are constantly present in our gardens…and our lovely cats Nina, Chance and Pongo the dalmatian.

The careful preservation of natural heritage, carob forests, wild fruit trees, native palms, the many varieties of herbs and some rare species makes this place a natural paradise. Wildlife finds an ideal habitat in the Plateau: wild rabbits, porcupines, buzzards, hoopoes, owls and foxes are the creatures that live harmoniously in our area.

THE FARM
At Cammarana the land is protected by stone walls. Indigenous to this land are the carob forests and olive groves that were originally planted by the Arabs. We use a rotation culture that alternately produces wheat Russello and hay. Each season different herbs and wild flowers grow in the grazing fields that are fodder for the Modica cows that produce a milk cheese typical of this region: the Ragusano d.o.p.

The Cammarana Estate produces an excellent, well-balanced olive oil that is full of aroma. The oil is produced from olives that grow on our olive trees (Iblea biancolilla and Moorish qualities).

The olive groves contain different kinds of centuries-old native trees and new trees with an average age of 8 years. This allows us to produce one of the best oils in the area, by virtue both of our position at 360 meters above sea level as well as of the so called cultivars.

Every November the olives are harvested by hand and cold-pressed the same day. The oil is not filtered. Our estate, like most of this part of the region, is enhanced by large carob trees that are long-lived plants of majestic beauty.

The landscape of the Ibleo Plateau is covered by these great trees with their characteristic umbrella fronds, and their trunks covered by a reddish bark. They bear sweet fruits/pods that are pleasant to touch.

The carob harvest begins in late August. The flower that is produced from its seeds is a valuable ingredient for the confectionery industry. We make use of it for the production of home-made bread and delicious biscuits.

THE MEADOWS
Nature is our garden. One of our valued projects has been the preservation of the stable meadows, grassy formations that have never been tilled (ploughing and harrowing).

These form the habitat of species of interest, for example, Hermodactylus tuberosus, Erysimum bonannianum, Neotti nidus-avis, Oprhys fusca. During recent years we have made an inventory and catalogue of the species found in the stable meadows of the Ibleo Plateau: we have contributed a new tool for the conservation of biodiversity in this part of Sicily

ENVIRONMENT
The landscape is pervaded by the black earth typical of this area of Sicily, interspersed by large sheets of white rock creating a picturesque duotone. A wide variety of wild plants, such as thyme, sea squills, asphodels, thistles and irises adorn the lawns behind the rocks.
