THE PALMENTO
The old Palmento, one of the biggest in Sicily, is a cornerstone of the wine resort. Its name comes from the Latin “paumentum”, which refers to pressing something, like grapes, in basins, which then allow the collection of the must using gravity.

In a few of the eight basins for pressing, the discolouration caused by the tannins remains as a historical testimony left on the stones in a place dedicated to the production of wine. Today the Palmento of Feudi del Pisciotto is historical evidence of wine production in Sicily and the role it played in the local economy.
